Lemon Coconut Muffins using Freekeh Flour
Ingredients
- 200g Freekeh flour*
- 125g Creamed coconut
- 100g Coconut oil
- 200g Coconut sugar
- 2 Lemons
- 3 Large eggs
- 1Tsp Baking powder
- 1/4Tsp Bicarb Soda
- 25g Desiccated coconut
- 100mL Double cream
- 90g Lemon curd
Note
Wholegrain Freekeh can be milled into Freekeh Flour
Method
Start by combining the creamed coconut and coconut oil and whisking to soften them.
Cream them together with the sugar and the zest from one of the lemons.
Beat in the eggs, one at a time.
Sift in the baking powder, bicarb soda and freekeh flour, then fold in together with the coconut and the juice from both lemons.
Spoon into 12 muffin cases (90g)
Bake at 180º for 17 minutes, then turn out onto a wire rack to cool.
Whip the double cream to soft peaks, then fold in the lemon curd.
When the cakes have cooled, make a slash down the centre and spoon in some of the lemon curd.
Top with a sprinkling of toasted, desiccated coconut.
