Loaded Cheesy Fries
Ingredients
- .5cup Edlyn Mild Chunky Salsa
- 1bag French Fries Shoestring Potato Chips
- 2 Chorizo Sausages
- 2.5cups Grated Cheese (mixture of 2 types)
- 1tsp Olive Oil
- 2Tbsp Coriander Leaves
- Lime Wedges
Method
Pre-heat oven and oven tray to 230°C (210°C fan forced) for 10 minutes.
Spread french fries in a single layer on a preheated tray. Add to oven and cook for 10-15 minutes (oven times may vary).
Cut Chorizo sausages in to 1cm squares.
Pour oil in to frying pan and warm over medium heat.
Add cut Chorizo and cook for 5 minutes or until lightly coloured and slightly crispy. Once cooked to liking, transfer Chorizo to a paper towel to drip dry.
Once french fries are cooked, transfer to a oven-proof serving dish and cover with cheese mixture.
Add the french fries and cheese mixture to the oven and bake for 10 minutes or until the cheese has melted and there is some colour.
Remove french fries from the oven and spoon over the salsa mixture and chopped Chorizo.
Garnish with coriander leaves and lime wedges and serve.
