Vegetarian Pizza

Ingredients

  • 85g Wood's Roasted Garlic Aioli
  • 280g Pizza base (store brought) or Pizza dough
  • 110g Grilled eggplant
  • 90g Vegan Mozzarella (fresh)
  • 80g Roasted red peppers
  • 75g Black olives (pitted)
  • 75g Roasted pumpkin
  • 65g Grilled Zucchini
  • Fresh Basil (to garnish)

Method

Pre-heat oven to 230°C (210°C fan forced) for 10 minutes.

Spread Wood's Roasted Garlic Aioli thinly on pizza base.

Break fresh mozzarella into small pieces and add to pizza base.

Evenly distribute vegetables and olives over the top.

Finish off with grated Parmesan.

Place pizza base on a pizza stone or tray and bake in the oven until golden and slightly charred.
